Thanks for this article. Another alternative to frying is to grill the salmon. You cannot beat the flavor. Use a hot grill, grill skin side down for 2 minutes, turn and pull off the skin which is now crispy. One minute more on this side, then turn again for another one minute. At the same time, cut a lemon in half around the middle, and grill with lemon flesh down on the grill. Lemon flesh will cook until slightly mushy. Then let guests squeeze them out on their cooked salmon. Fantastic! (Most restuarants overcook salmon, so it is not tender. Slightly pink in the middle is perfect.)
