When I was a young teenager I lived with my paternal grandmother, whose parents were from "the old country" - in this case, Czechoslovakia. When she made pancakes for breakfast she always made sure she had plenty of pancakes left over, which she refrigerated overnight in the refrigerator. The next morning those cold pancakes were cut in strips, then fried in butter in a medium hot skillet until they started to brown, then liberally sprinkled with sugar and fried some more until they began to crystalize slightly and brown -- served hot, they were a rare treat. She called them "Schman".
