To what extent did we know and agree? My son took his life 2 days after Christmas this last year. I cannot fathom that I knew or would have agreed to experience this. I am trying so hard to understand what my Father wants me to learn from this and what He would have me do moving forward. I will have to trust that He will show me a little here and there.

The evidence that we can rely on is that President Eyring taught that concept in his General Conference talk of April 2004 as referenced in this article. We can trust that he was inspired to make that declaration because we know he would pray over such an idea and receive personal confirmation that it is true. Also, some members are given personal revelation in some form, i.e., patriarchal blessings, other priesthood blessings, or other forms of personal revelation making known to them of previous commitments made in the preexistence. I have had that experience myself. Your question is a valid one and it is wise to understand where the evidence comes from.

Is there evidence to support the premise that in the preexistence we chose our trials or agreed to the particular ones we experience? I agree it makes sense but I would like to know the reference that validates that idea.

I find it hard to accept that we agreed to EVERY specific trial we endure in life. I don’t believe my wife requested the Alzheimer’s she has, although she might have come here knowing it would happen. However, I do know that some things were arranged before we were born. Since I was small I knew there was only one woman I was destined to marry. After my first date with my future wife I began telling people I had found her.

Well written piece of philosophy. The only point on which I'd disagree is the statement that we didn't know what fear and strong emotion were until we came to earth.
Satan and his followers, who will never experience earth life, are nonetheless filled with rage and hatred. That would qualify as strong emotion.
Remember, before the opening kickoff on this planet we participated in a war in heaven. There were important things at stake, and someone won, while someone else lost. Such conflict has to involve fear, uncertainty and other strong emotion.
And could any emotion be stronger than the love we had for our Heavenly Father and Jesus Christ, which propelled us into this mortal existence?

This exactly how I have tried to approach my life. I have had great joy and great sorrow, but I have learned that the trials always come before the blessings. I have tried to endure well and I hope to be able to endure to the end, just as The Lord did.
